What are your go to meals when you are looking for a cheap lunch or dinner?

Ok...inflation is running wild around here. Can we share some of our inexpensive (cheap) dinner ideas?

I rice/shred up cauliflower to keep in the fridge for me. I cook up batches of rice and freeze in individual portions for my hubs. Then it is easy to warm up each on the stove with frozen veggies, meat and cheese for a quick meal with a side salad or bun. Another quick meal is stuffing a wrap with salad greens, chicken, tomatoes, pepper strips, sometimes cheese, and then drizzle with dressing before wrapping up. I like to use a spiced yogurt/ranch dressing that I mix up with equal portions of both and add in hot sauce.

Pasta and a tomato sauce with lentils are my go to meal. It's great to be vegetarian. The prices of meat right now is ridiculous!

Meat prices are insane. Good idea for the leftovers in omelettes and pizzas. But think omelettes would be a good addition to out evening meals.

For us... just boiled potatoes with butter and salt... our family's comfort food... my husband sometimes puts cottage cheese on top but we dont' always have it in the fridge...

My daughter loves boiled potatoes. She will also eat them as comfort food.

I used to say eggs, but sheesh, a dozen eggs are $4 now. That is still way cheaper than just about any other protein, so egg salad is a good one. Angel hair with butter and cheese is one of my family's favorites.
Pancakes from scratch: flour, baking soda/powder is usually on hand

Eggs are terrible...but you are right, they are one of the cheapest proteins available now. Brian has never liked breakfast for supper...I LOVE it! But I rarely do it. However, I think I'm going to add it to the menu one night a week. He can eat leftovers. ;)

Worst right now are the coffee prices. Ok ... I know it isn't food, but anyway. I'm more upset of the price of coffee, than the price of gas. LOL

I am more than a little relieved that so far *KNOCKS WOOD REALLLLLY LOUDLY* coffee has been mostly stable here.

I think y'all could help here. You American just make bland, tasteless coffee anyway ;)

You get 2 packages of coffee for what you could get 3 (or even maybe 4 if it was a good sale) - just at the beginning of this year.

But honestly, I'm not complaining. We have food, we have money, we have a house. Heck, I can even afford to feed two spoiled cats.

Watched the news last week, they interviewed a teenage boy (sorry don't remember the country, but somewhere in South America). His "job" was to go into town early in the morning with his friends, to check the dumpsters outside of fast food restaurants, collecting leftover chicken. Then they went home to the land fill where they lived. and the mothers washed the chicken & cooked a stew. The reporter asked the boy what he wished for the future, and he said: "I would like to try chicken that has only been cooked once."

Yup. Now we all can go back to our happy lifes. You're welcome.

Like Chris @faerywings said, it was always eggs and cheese for us. The price of eggs is ridiculous! You used to always be able to count on eggs being super affordable. #angry2

My go to and freezeable food is a chicken tortilla soup that I cook in the crockpot-put everything in- chicken, broth, diced tomatoes, beans and slow cook. Freeze what you want. Can foods are still relatively cheap.

chicken is still the cheapest protein - last week it was 3.29/pound for boneless chicken breast. so these days make lots of meals using this chicken - typically i use about 2 pounds to get 4 meals for the 2 of us or 8 servings.

I will add veggies and pasta or rice/cauliflower rice and misc items to make it different. - example last week i had buffalo chicken/rice , another time had slow cooker italian chicken , chicken tikka masala and tonight making chicken fried rice. oh and all of these are weight watcher friendly ( old blue plan)

Brian could not live without his coffee. I'd struggle but I think he might die!
