RECIPES: Vegetarian/Vegan

I have been cooking a lot more vegan meals lately. I am obsessed with tofu. I swear I could eat it every day.

I made this Melting Afghan Chickpea Curry a few days ago and we all LOVED it!! Nagi creates wonderful recipes :lovey3:

Edited to add that I used chicken broth, coconut oil, and ground cinnamon instead of the sticks ;)

I had tofu and chick pea curry last night- first time I ever had curry ever! I'll have to try this recipe too

Chris, while looking around the forum I discovered this post. In the late 1970's while living in England we met new friends from India, who introduced us to our first curry. Theirs wasn't vegan, but chicken. We fell in love with curry dishes. While in England we bought and used Bolst curry powder. After moving back to the US, we tried American curry powder! Whoa, it was awful, compared to the Bolst. For the best curry ever I highly recommend you try Bolst curry powder. We only used mild, as neither of us liked spicy hot foods. Later, after my husband passed, I went plant based and made my curry using Bolst curry powder and Butler Soy Curls. Due to salicylate sensitivity, I can now only eat curry occasionally, so a friend who buys Bolst sends me some of hers. It's costly, so perhaps you can find someone to share it, and the cost, with. I don't have any at the moment, or I'd send you a sample.
 
Thanks for the tip on the Curry powder. Mark loves curry and is always on the lookout for the "best" curry powder! Just today Mark told me he went into a local indian market, and one of the gals there gave him her opinion of the best.

I haven't even had breakfast yet! Now I'm so hungry after checking those recipes out. Yummy!

A funny story about our first curry with our new friends from India. We had several other people with us, and we were going to have our food outside, picnic style. I was helping my friend in the kitchen getting everything ready to go. The husband walked in and he asked her if everything was ready. She replied that it was. I spoke up and said, we forgot the cutlery. He looked at her sort of funny, as I opened a drawer and started taking out the cutlery. She smiled, and added it to one of the containers. After we were at our location, food on the table, and every one seated, she began to dish out the rice and curry. The cutlery was just lying in a heap on the table, and hubby, I, and our sons, grabbed our forks and spoons. That's when I noticed no one else was using cutlery, they were making little mounds with their fingers of rice and curry then eating it. I had no idea that's the way curry is eaten in India! I then understood their looks in the kitchen, when I mentioned bringing the cutlery. We had many a laugh over that through the years. And, I never did get the hang of eating with my hands!! :giggle4:
 
I am so glad this thread is still going :)
Way back when it first started, I hadn't even met Tom yet. He is officially moving in here today since he and my DD haven't had any luck finding a house or apartment before their wedding in September.
I am stocking up on some vegan ingredients and quick meals for him but I know I'm going to come back to this when I need to make actual dinners.

Fast Fwd to August 2025: What a difference (or lack thereof) a couple of years makes.
Caitlyn andTom have been married for almost a year. They still live here because the housing prices in NJ are insane.
I buy 4-5 blocks of tofu a week and it is now one of my favorite foods. I cook vegan recipes more often than not, but I don't think I could ever give up eggs and dairy.

But my attitude towards tofu did a 180°- yum yum yum!

Amazing how time is flying! My granddaughters are both still living at home because prices are insane here in rural NC as well. I have sensitivity to soy, so have to take it easy with tofu, although I love it, especially tofu recipes from Chuck, Brand New Vegan. I'm with you, Chris, on the eggs and dairy, especially cheese.
