Favorite Freeable Meals

Ok Ladies, hit me with your favorite freezable meals. I don't know if I am going through an early nesting phase or what, but I'd like to get a start on freezing some meals over the next 2 weeks before this little man comes. I think I need some varity of my usual freeable meals, pot pie, mac-n-cheese, and stuffed shells.

What are some of your favs?

I go to costco and buy a 2 pack of flank steak put each one in a ziplock with some kind of marinade and cook it up later. You can also do this with chicken. Also, if you can get some aluminum pans to freeze in YOu can take some chicken breasts cover them in honey mustard sauce, cover with bread crumbs and the sprinkle with pecans. Way yummy. Also, there are a lot of meal prep places that have everything set up for freezer meals. Check out this website that has a listing of different ones all of the country. Sometimes I go to their websites and get my own ideas of things to make.

Here's how I make Lazy Lasagna:
Do NOT cook the pasta
Layer raw lasagna pasta, sauce, meat, and chees in a 9x13 foil pan and freeze.

When ready to eat preheat oven to 350. Pour 1 - 1 1/2 cups of boiling water in the pan (just pour in the side, not directly on top ) Bake for an hour or until pasta is tender.

I love to make up a huge batch of breakfast burritos - although i eat them any time of the day. I brown the sausage, scramble the eggs and heat the flour tortillas in the microwave (I use the small, 6 inch size rather than the full burrito size).

Then, I assemble them, and wrap individually in plastic wrap, dump the lot in a gallon sized freezer bag and toss in the freezer. When you want one, take one out, unwrap it and pop it in the microwave for 1-2 min depending on your micro!

In case you aren't familiar with these, assembly means a spoonful or 2 of eggs to a spoonfull of sausage (bacon and/or ham also work), sprinkle with cheddar cheese, and some salsa to taste. Fold one end up and then roll from the side.

Sauces like marinara or creamy Alfredo easy to put with cooked up pasta. Enchiladas. Broiled chicken breasts, easy to add to a variety of items including salad, etc. Pancakes or waffles, taco meat....I am very lazy, so these are some of my go to freezer items.

oh, I just remembered something that is great for individual meals. I make up my favorite veggies like green beans and corn, etc. I only cook them 75% done, then I line those mini-loaf pans with plastic wrap and fill each space. Flash freeze, then pop them out, wrap them up individually and put in the gallon freezer bags. When making myself lunch or if we all want something different for dinner, I take out whichever item, unwrap, pop in a microwaveable bowl and nuke it.

Instant side veggie for one!

oooh Vicki is the Queen here! Meatloaf freezes good, ziti, chili No potatoes- they get mushy. nesting! So exciting!

Such wonderful ideas! I definitely need to do more of this as now that the kids are getting into more and more activities, we are short on meal prep time during the week.

I am going to make a big batch of these!!!!! I never thought about freezing them. It will save some time in the morning. I plan on nursing again and I didn't like the thought of trying to have a kid attached to me while making breakfast...or listening to the other 2 tell me how hungry they are!

YAY! I'm so glad I could give you a new idea! They freeze really well too!

Something else I like to do is to make a big batch of soup (I can share some great recipes that freeze well if you want) and I package these into quart size freezer bags in individual portions. I lay them flat on a shelf to flash freeze, then you can stack them or stand them to store easily!
