Some of our favorite soup recipes- for Trudy, but feel free to add on!

What i do with this one is I bake more potatoes. I cut the baked potatoes in have, carefully scoop out the potato, leaving a bit of it in the skin. brush the skins with a bit of melted butter, bake for a few min's till slightly crisp. Top w/ shredded cheddar and crumbled bacon- Voila! Potato Skins!

I also use a stick blender instead of a potato masher, much faster.

My tip for this one- I use 2 bags of frozen broccoli. microwave it slightly less than the bag says. let it cool, chop it up and toss it in. Saves a ton of time. I also use whatever cheese I have on hand. Last year, we had a leftover cheese paltter - all of the cheeses were cubed up- I dumped that in the kids thoughtit was great getting little lumps oif cheese LOLI also have recipes for Fr Onion Soup I can post, a turkey/rice soup.....and some others... I'll get to them in a bit

Wow thanks Chris... you are the best!! Both of these recipes sound delicious!! I am crazy over broccoli cheese soup and will make both of these for sure!! :kiss: My tummy thanks you very much!!
 
Here's my all time favorite soup. This is soooooo easy, even I can make it! and it is simply divine! I add a can of corn to this just cuz I love corn :) (don't put the corn in the blender with the other veggies)

[FONT=Verdana, Helvetica, Arial]Italian Vegetable Soup - about 5-6 quarts

3/4 lb ground beef
3/4 lb Italian or pork sausage
1 large onion
2-3 carrots
2 celery stalks
2-3 cloves garlic, minced
1 bay leaf
Beef broth - about 5-6 cups
1/2-3/4 c macaroni noodles, uncooked
24 oz can diced tomatoes
15 oz can red kidney beans
1/4 cup red wine
15 oz can tomato sauce
About 1/4th tsp fennel seed
About 1 tsp parsley
About 1 tsp basil
Salt/pepper to taste
About 1/2 cup frozen or canned corn/peas
Add small can of tomato paste if needing more flavor


Combine beef and sausage and brown together, then set aside. In stock pot,
saute onion, carrots, celery, garlic and bay leaf together for about 5-7
mins. Add enough beef broth to just more than cover vegetables and cook
until soft, about 20 mins. Continue simmering and add noodles and remaining
ingredients. Cook until noodles are done then add beef/sausage.

**Add more beef broth/wine if too thick or more frozen/canned vegetables if
too thin. Adjust spices to taste.

Here's my adaptation of a classic! It might be on the chunky side though :( Trudy I have no idea how you're surviving!

Meg’s Cream of Chicken with Rice

3 cans reduced sodium chicken broth
1/3 teaspoon minced garlic
4 stalks celery, chopped
about 2 cups cooked chicken or turkey, or one roasted chicken, finely diced
2 (15 oz) cans cream-style sweet corn
about 2 cups cooked instant rice
1 pint half and half
1/2 teaspoon salt

BRING the chicken broth to a boil in a 4 quart stock pot.
ADD the garlic and celery.
LOWER the heat and cook for 10 minutes.
COOK the instant rice according to package.
ADD the chicken, cream-style corn, and rice.
COOK for 10 minutes over medium-high heat, reduce if it boils too much.
STIR in the half and half.
COOK for 5 minutes, until heated through.

Note: Instant rice can be substituted for regular rice, but will not make as thick of a soup.
 
Awww you guys are the best!! These are all fantastic and I know that I will try every one of these recipes...Can't eat much else :hungry:
 
Here is a quick from memory (TIFWIW!) french onion Soup-

Thinly slice 3 lbs onions. Melt 1-2 Tbsp butter in stock pot. Add onions, cook and stir occasionally over med heat- 20 min's til soft, but not browned.
Add 4 cups beef broth, a splash of sherry, 1 tbsp Worcestershire sauce. simmer 10 mins.

Toast Italian bread- you can throw cheese on top if you want. what i do to make life easier is put the bread on the bottom of the soup bowl, slice cheese on top, and then pour hot soup over it.

I have been bugging Chris for some of her famous soup recipes, because I have a problem with my jaw and can only eat soft mushy foods. I will be getting splints put in my mouth so I can hopefully have full use of my jaw again. So Chris was kind enough to start this thread. Isn't it great!!! :clap2:
Poor Linda has been very sick with a terrible cough and hopefully she will benefit from all these great soups too!:nod:
 
I have a sausage and spinach soup recipe I am going to dig up for you today and a pumpkin/butternut squash recipe too.
