Help! I need a great tasting recipe for using fresh corn. I went to the huge local farmers market and got 5 dozen ears of organic corn. What was I thinking? :) I've shucked it, blanched it and put in the freezer. Now, I need some recipes for eating it. I could find some recipes online, but I'd like to have some tried & true recipes to try, that you suggest. TIA. Also, has anyone tried using an air fryer to cook corn??

Oh I am soooooooooooooo jealous!!!! I ordered corn from the supermarket ast week and there wasn't any. I am going to try again this week.

I haven't made anything with fresh corn other than on the cob but I hope that you find something good. I have always wanted try corn chowder, maybe someone has a recipe for that?

Can't help you ... I haven't seen that here in the store / market ... have never eaten that ...
I only know the corn to make popcorn ...

Those both look good, Trudy. Thank you. I found a corn chowder recipe that one of my bloggers swears by so I’m going to make it and the cornbread one you sent here. I’ll report my review afterwards! :). Thanks for chowder idea, Chris!!

Still accepting recipes since I have lots of corn. Hahaha

We don't eat a lot of corn because our youngest dd has stomach issues and that's one of the things she can't ever eat. Hubby loves any kind of corn, so we eat corn when she's not here.

Thanks for the recipes, tho. Maybe I'll give them to hubby (he's the Chief Cook around here.)

It blows my mind that corn isn't the center of everyone's world as it was mine like my whole life. Until, now, I can't really eat it :( Too many food allergies now but corn is divine - just not very digestible lol

This is not a figure friendly recipe & not one that I can indulge in frequently but I did enjoy the dive into it though. :)

I sautéed all my veggies first.

Fresh cut corn (I roasted mine on cob, on the grill first, then cut)
Bacon cooked & diced
3 celery ribs - cut into small pieces
1 onion - chopped small
3 garlic cloves - chopped
Baby carrots - sliced
2 baking potatoes - peeled & diced into small pieces
3 cups milk
1 cup heavy cream
salt & pepper (I used non salt seasoning mix)
fresh parsley, rosemary & thyme

I cooked in my Instant Pot on soup setting. You can use a slow cooker or stovetop, depending on how hungry you are. haha I think grilled chicken would also be good in this.

My cornbread recipe:

1.5 c flour
1/3 c cornmeal
1 Tblsp sugar (I use Stevia)
1.5 tsp baking soda
1.5 tsp salt
1/8 tsp pepper
2. Tblsp butter, melted
1.5 c buttermilk
3 large eggs
1/2 tsp red pepper flakes
fresh cut corn

Preheat oven to 350 degrees F
Mix flour, cornmeal, sugar, baking soda, salt & pepper & pepper flakes.
In separate bowl whisk together the butter, buttermilk & eggs. Stir in corn.
Mix dry & wet ingredients together.
Pour into round cake pan.
Cook for 30 minutes. (At least that's what it takes in my toaster oven.)

* I like to add 2 Tblsp of butter in the bottom of my cake pan and melt it while preheating the oven so its piping hot when I pour the mix in. It gives it a crusty bottom. (Hey...with this many calories..what's a few more. haha)
