And my goodness, every muscle, bone, joint, and brain (ok, I only have one of them) in my body hurts. Between the cold temps and the low air pressure from the storm, I ache all over. The remnants of Ian turned into a Nor'easter and this is Day 2 of 3 days of rain, it should clear out tomorrow. I think I might make today a PJ day. It feels like I should. *nods*

I got a few more of my to-do list items done, -- and even wrote 4 voter letters instead of 2. Paid that darn medical bill which made me aggravated. I did a little scrapping. Then, I made homemade mashed potatoes for dinner. To go with the chicken. The chicken was no big deal but mashed potatoes are delish! 3 lbs of potatoes and there are hardly any left. I should have made the entire bag to have some as leftovers.
God help me if I ever get Type 2 diabetes. I will never be able to survive on a low-carb diet. bwuahahah!!

I have some more general housework things to do today, I have to finish my food order and then some laundry. Gary made penne and vodka* to bring to his mom's Saturday and I am going to turn the leftovers into deep dish penne and vodka pizza. Do I make two pounds of pizza dough or just one? hmmm.....

*Technically not penne and vodka. Gary goofed and grabbed the bottle of rum instead of the vodka and we ate Pirate Penne instead. Yarrrgghhh! Believe it or not, he added a little extra red pepper and olive oil and you can't tell the difference. We will still make fun of him for it though. We are nice that way.

I might try to work some more on the photos- organizing and maybe scanning some of them. I could use some more material to scrap with

Good morning ladies! Another beautiful day here. In the low 60's this morning. Slept with the windows open. I'm telling you...this is glorious.

Shaun got a call about his pre-op. Fortunately the appointment is at 7:00 a.m. so he can get it over with and still head to school in the morning. He is taking it in stride...I'm a little nervous. Oh well, that's what mom's do, right?

Started organizing and scanning a few photos yesterday. Lots more to do!

Everyone have a good day...hope it's more interesting than mine. (Although with some of the interesting stuff that has been going on here, I don't really need interesting.)

Yes, ma'am, that is the key to dealing with health insurance. I have notebooks of interactions where I have the time/date/name of the representative I spoke to as well as what they told me and what they/I needed to do to follow up. Notebooks. I had many, many notebooks. :eek::eek::eek:

@vickyday yup- french drains = trenches. I am sure there is more to them than that from a technical aspect or else they wouldn't be so expensive. LOL
Glad to hear that your stomach is better!
Have to laugh that there are more important things than banking- like scrapping. Do you have access to your acct online? I check in around once a week to make sure it all looks good so I don't worry about balancing it as much.
Is chicken stew a Southern cooking thing? What kinds of spices/seasoning do you use?

@taxed4ever Hi Trudy!!!! Speaking of stress..... yikes, did your ILs offer get accepted? Good luck to all of you over the next months. It has to be sad to see their house leave the family but it is for the best. It sounds worrying about your FIL not doing so well. Maybe it is only stress-related too? Doesn't seem that way but I can hope.

@bcgal00 It seems like you are feeling a lot better - energy-wise, at least. That is fab news. I saw the apple photos on FB and I cracked up! I love all of your nature photos. Do you think you will ever go "pro" again and do shoots or sell prints?

Back in for a few personals.

@faerywings sent Brian to the store instead so got just a few items. We had dried beef gravy on biscuits last night. I was the only one that really liked it...and I think for me, it was more about the memories of having it when I was a kid at home. Foods bring back so many memories for me! You are right, no point in stressing over the jobs. It will all work out in the end.

@vickyday I would love to have that chicken stew recipe when you get the time. That sounds so interesting.

@BrightEyes I have to agree, I loved Secret in the ColorPlay collection. Honestly, I loved the ColorPlay palette so much this time. Hope the winds are blowing your way this morning!

@taxed4ever oh my goodness. It sounds to me as if you are going to have more chaos than even I normally have. Very excited that your in laws are moving to where you won't need to worry about them this winter! You are a very good daughter-in-law!

@Cherylndesigns I loved that photo of you and DH that you used for Momma O's challenge. The more I see of that area in Ft. Myers and Sanibel Island, the more amazed I am that Steph's things turned out so well.

@bcgal00 I too saw the photos of the birds with the apple. I really miss feeding the birds but those darned river rats that came to eat what the birds dropped really freaked me out. Maybe I need to try again! They made me so happy! In the meantime, I will live vicariously through you!

Good morning ladies. I am hopping in the shower in a moment, then heading out for a short photo walk at the park. My car goes in for oil change and winter tires this afternoon and then tomorrow morning we'll drop the car off in early morning for the bumper repair (they'll keep it for a few days). Jen will follow us there so we can then hop into her car and we'll head out for a 3 day adventure. We're going to Wells Gray Park (one of the largest in BC). We booked a few nights at a dog friendly hotel in the little town at the base of the park where D will hang out with the dogs most of the time while Jen and I go off hiking. We will see waterfalls and enjoy the scenery. We may or may not see bears or other wildlife. We are waiting to hear if one of the tour guides is available but if not Jen and I will go out on our own and just not wander off too far from main paths. There is at least one waterfall that is a very short walk from the main road so D will get to see that one but he won't do the big hikes with us. Jen and I will probably go back in the late spring for a few days. Then when we get back, my car should be repaired |(fingers crossed). I don't trust when they say it'll be ready in a few days but it would be nice to get it back Friday afternoon when we get home.

@faerywings No, it doesn't sound like low carb would work for you :) I used to love mashed potatoes but garlic cauliflower cheese mash is pretty good. I still eat potatoes every now and again but maybe only once a month or less. Low carb pizza doesn't taste anywhere near as good as wheat pizza crust so I indulge in regular pizza sometimes but again, only once every 4-8 weeks.

My stomach is still bothering me a little (since covid) but hopefully my gut will heal, I'm on tumeric and probiotics to help my digestion. I drink tumeric/ginger green tea every night which seems to settle my stomach a bit. I noticed last night that the swollen neck node was a bit smaller so maybe there'll be a chance I won't need it removed, maybe it will finally now start to subside. That sure would be nice. I should hear from the doctor next week so we'll discuss the test results and if all are negative then maybe he'll give the node a bit more time to reduce. Fingers crossed.

@LSlycord Sending good vibes for S. The apple eating bird photos are cute, aren't they? It was a blast to stand a few feet away and watch them squabble about who got to eat and they kept pushing each other off and they were very loud LOL.

I'm hopping in the shower so I can get out for my early morning walk. BFN

Yes, I can access my bank online. I also get an email everyday and that keeps me in line, so I'm not too concerned about it going awry. I guess I'm a tiny bit OCD in getting those statements balanced, however, lol! The main thing I try to keep track of is the credit card stuff. I take the purchases out of the check book as I spend the money because I have it set up to pay right from the bank. I write very few checks anymore. My tithe to the church, grandkids' birthdays, our auto tune up guy only takes cash or check (he is OLD school, lol) and the DMV yearly property tax/licensing (I could do that one on line, but they want to also charge you a fee for using a credit card. NOPE! Not happening! They charge enough already as it is!) That being said, the last time we went to a rather popular restaurant and used our credit card (who doesn't) they charged us $10 to process it! Holy Moly!

I do believe the chicken stew is a southern thing, but I'm not sure. I use poultry seasoning, salt and pepper. No measuring, just dump it in, lol! I normally just cook chicken breast but Mark wanted to cook a whole chicken this time. He says the bone, etc gives it more flavor. He even volunteered to pull the meat from the bone. However, there wasn't much work to be done because after boiling it for several hours it all fell off of the bone. He just had to go through and separate it. But I let him! The reason I use boneless skinless breast meat is because I don't want to have to sort the mess! Whatever! He said it was EXCELLENT! And that's all that matters, I guess! ;)

I will mention the French drains to Mark and see if he has ever heard of them. He probably has. The man knows more "trivial" stuff than anyone else I know of!

Good morning all.

I was whisked away all afternoon and most of the evening yesterday - Adrienne called and wanted me to ride with her to Arkansas! Yikes - it was over a 2 hour drive each way. We had a lot of fun though and always find things to laugh about along the way. She finally got her new car - they had to go to Arkansas to get it and that was 3 months ago - cars are SO hard to get now. Alyssa went with us and drove Roger's truck home. She wasn't thrilled with us because we were jamming to the oldies all the way there. She finally laid down in the back seat and went to sleep. LOL

Chris @faerywings I'll tell Adrienne you said happy birthday. I know that YOU don't know anything about stressing over the kids. (I loved "insert maniacal laugh") My whole body just about shut down when it was over. Steph even went back to work yesterday!! Remember how stressed she was over her job? I kept telling her not to worry about that. If the building was intact, there would be a job to go back to. I guess they had some minor leaks, but nothing other than that. She works in one of the big shopping malls, so apparently it didn't get damaged. She works for a Physical therapist, but it's in the mall.

Linda @LSlycord I'll be thinking about Saun and you try not to stress too much, either. That IS what mom's do. Thanks for the sweet comment about our picture. Ava took those last fall and she wants to take more this year. I had to hornswoggle Chuck into that last year, and I told her I don't think he'll do it again. LOL Yes, Steph was certainly lucky - the devastation in Ft. Myers is unimaginable. I keep seeing places we'd been and streets (downtown) that we'd walked on, and it just blows my mind. We're all so upset about the destruction on Sanibel. Asher is still out of school all this week - they closed down for two weeks, then will re-assess.

I'd better get off of here - I'm going to make Adrienne a cake - don't all of you fall over from shock. Have you ever heard of a Chocolate Mayonnaise Cake? I got a brainstorm last night to make one and I knew we had all the ingredients and I don't have to make a trip to the store so that's what I'm making. I guess they were invented during WWII because people couldn't get eggs and this doesn't take eggs. It doesn't take cooking oil either. I hope it's a good as I remember. Kind of like brinking back a memory from childhood, like you said, Linda @LSlycord with the chipped beef gravy - which I LOVE BTW.

Good afternoon!
I'm having an off day today. Mark and I went to a Bible Conference last night and by the time we got home I was beat. Actually went to bed at 11! BUT, I was fully awake at 2 a.m. Could NOT go back to sleep to save me. So I ended up getting up at 3:30 (I figured 1 1/2 hours was enough tossing and turning to try to get back to sleep). But, because I was still tired I was getting a headache by 6 a.m. when Mark left for work. He sends me a text everyday on his 10 a.m. break, so I told him not to be surprised if I didn't answer back right away because I felt a trip back to bed was forthcoming! I stayed up until about 8 before giving up. I had taken some tylenol, so the headache had eased up some. I slept until about 11:15 and it was time to get up!

Anyway, I have gotten most of the challenge layouts done! Is anyone else OCD about doing them in order? I "messed up" and did #5 first this time. It was at the top of the list when I began working on the challenges and I did not even pay attention that it wasn't #1 until I got ready to post it! ACK!! Shame on me for causing myself undue stress and anxiety! You know, they say that is one of the causes of IBS! And I believe it is true as all of my problems began with my first husband's cancer diagnosis! I thought I was handling everything well, until I realized I really wasn't!

So, I didn't get any scanning done yesterday. I ended up going out to try and find a new pair of shoes! And I needed some new rubber sink mats. Can I just say how disappointed I was by the time I left Wally's World empty-handed! Then I went to some other shoe stores......nothing! I went to a few other stores to look for the sink mats......nothing! WHAT! I ended up coming home and ordering both from Amazon! What a joke! I'm going to stop wasting my time going out when I end up ordering from home anyway! That will give me more time to scrap! ;)

I think my hummingbirds have finally migrated! Figures they would just as soon as I filled up their feeder again! But, I don't blame them! It was 46 degrees when I let the dog out this morning!

It is a rainy day... woke up to rain and cloudy skies. Was surprised that many of the balloons took to the sky this morning. Hardly any wind so that was a big factor on them not flying yesterday. Didn't get to take any photos as I had to scoot out of here at 7:15 to get to the doctor's appointment at 8 AM. Was glad to get back home and change from short sleeve top into a long-sleeve one. Although the temp in the house is at 74* - the humidity makes it feel much cooler.

The doctor was pleased with my BP but not so much with a couple of small events I had. She has to get permission from Medicare for a couple of referrals and a couple of tests. Could take a few weeks to get the go-ahead and get them scheduled. So it is still a wait and see. I should get a new BP cuff/monitor as the one I have is several years old. It registered within 5 points of the doctor's so will continue to use it until I get the new one. Didn't eat before seeing the doctor just in case she wanted lab work done... but nada on that. Now I need to get some brunch. Back later.

ETA: I was really bummed yesterday evening.... I was scrapping a LO when my computer decided to update and shut down then updated. Of course, I had just placed most of the stuff on the page and was getting ready to save it when it shut down. Lost it all! Need to see if I can recreate it.

Linda, here is the recipe I use. My variations are in ( ).

Southern Style Chicken Stew
From A Southern Soul dot com

Ingredients:
1 - 3 pound chicken – whole, pieces or just chicken breasts
2 cups chicken stock
3 tablespoons flour
1/2 cup milk
1 tablespoon butter
2 cups whole milk
1 teaspoon salt
1/2 teaspoon pepper
(I also use poultry seasoning – judgment call on how much you use)

Instructions:
1. Add chicken to a large stockpot with enough water to cover. Simmer until tender, about an hour. (I let mine cook slow and easy for several hours on a setting of 3.) Remove from the pot, reserving 2 cup of cooking liquid. (If you have more, use it instead of the store bought.)
2. When chicken is cool enough to handle, remove skin and meat. Discard skin. Shred meat and return it to the cooking liquid. Add chicken stock then bring liquid to a simmer.
3. In a small bowl or cup, mix together flour, milk and butter. Gently spoon into simmering liquid and stir until incorporated. Add milk and stir. Taste and add additional salt and pepper if needed.
4. Serve hot with a dash of hot sauce if desired and saltine crackers.

***This recipe serves 8 to 10 people.

I've heard of a Chocolate Mayonnaise Cake, Cheryl! I'm pretty sure I've had some at some point when I was a kid. I think my aunt used to make it! I love chocolate cake, but can't do too much chocolate of any kind anymore because it gives me bad headaches!

Same for me, Chris! With my IBS, I have found that carbs do not cause me any trouble! As long as I keep it pretty bland! Mark has Type 1 diabetes and is supposed to stay away from the carbs, unless they are whole grain. Poor guy! He LOVES anything carb related!

Great news today! Remember the book Urban wrote about his genealogy research? Well, he was interviewed for a magazine about the book. The magazine is aimed at and about the Swedish traveller's community. Today the guy who interviewed him called and told Urban that they were willing to pay for the gas & the hotel in Vadstena so that Urban can go there and do some research for the part 2! We're going to Vadstena last week in October! My paradise!

I am sorry that I have not been chatty the last few weeks - sooo much has been going on!! Some good and some bad, but all in all, I'm still a blessed woman!

I don't know where to begin!!

Two weeks ago I got a call from my cousin's daughter (second cousin??) that my cousin Dayleen was in the hospital and it wasn't good. She was having severe abdominal pains. It turns out the sphincter that closes the esophagus was shut and was not opening, so her food was getting stuck. Her O2 stats went down into the 80's and her heart rate was dangerously slow. She started swelling up and had to go on dialysis. By the end of the week they were telling us that Anissa (her daughter) really needed to decide about DNR and DNI paperwork. I made plans to go down and see her in Palm Springs and would have gone yesterday. Anissa called me on Wednesday of last week to tell me that she had passed away. Dayleen was my first friend, my cousin, my concert buddy...and Anissa is like my first born child - I basically helped raise her as Dayleen was a single Mom and had a lot of sickness times. I was Dad, basically. So - that's been a really tough thing to deal with. I am keeping up with Anissa every day and just being there to listen for her. She's an only child and Dayleen was her world.

I have been planning our vow renewal and that went off without a hiccup on Sunday. I will make a separate post for that. The cake came out beautiful - I'll share that one here!!

I've heard of a Chocolate Mayonnaise Cake, Cheryl! I'm pretty sure I've had some at some point when I was a kid. I think my aunt used to make it! I love chocolate cake, but can't do too much chocolate of any kind anymore because it gives me bad headaches!
Mom and Grandma used to make it when we were kids. I hadn't had it for years, but it was always delicious. I won't tell anybody what kind of cake it is because they'll all turn up their noses. LOL I can't eat too much chocolate either, it bothers my stomach.
