Cookie Recipes???

I am struggling with my Christmas cookie list this year. I have a few staples that i make every year and I also like to try one or two new ones fo rvariety.

This is my list so far:
Walnut Cups (usually called Tasse's, I think? Brown Sugar and walnuts in a cream cheese based cup)
Walnut Balls (tea cakes?? Conf. sugar and walnuts rolled in powdered sugar)
Fregolata - an almond cookie, kind of crisp, dusted with powdered sugar.
Magic Bars
A chocolate/almond bar


What should I add? Anyone have a good recipe they want to share?
 
I made these the other day for the first time & they are delicious!! I used Craisins instead of dried cherries in mine. Oh, and because it has pumpkin & oats in it that means it is healthy, right?? :)

Pumpkin Cookies
Makes 3 dozen cookies

1 cup unsalted butter, melted
1 cup sugar
1/2 cup brown sugar
1/3 cup pumpkin puree
1 egg
1 teaspoon vanilla extract
1 1/4 cup flour
2 cups old fashion oats
1/2 cup toasted chopped pecans
1/2 cup chopped dried cherries
Heaping 1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda

Pre-heat oven 350 degrees

Place the butter, sugar, brown sugar and pumpkin puree in the bowl of a mixer. Mix well. Add the egg and vanilla and mix until smooth. Add the flour, oats, pecans, cherries, spices, salt and baking soda and mix well. Spoon onto a well greased sheet pan and cook until golden brown about 10 minutes. Let cool about 3-5 minutes then remove from the pan. Eat or store in an airtight container.
 
Can’t Leave Alone Bars

1 package (18 ¼ oz) white cake mix
2 eggs
1/3 cup vegetable oil
1 can (14 oz) sweetened condensed milk
1 cup (6 oz) semisweet chocolate chips
¼ cup butter, cubed

In a bowl, combine first three ingredients. With floured hands, press two0thirds of the cake mixture into a greased 13x9in pan. Set remaining cake mixture aside. Microwave the remaining ingredients uncovered on high for 45 seconds; stir. Microwave 45-60 seconds longer or until chips and butter are melted; stir until smooth. Pour over crust. Drop teaspoons full of the remaining cake mixture over the top. Bake at 350* for 20-25 minutes or until lightly browned. Cool before cutting.



Chocolate Revue Bars

CREAM together: 1 cup Butter, 2 cups Brown Sugar
ADD: 2 Eggs, 2 tsp. Vanilla
SIFT together the next three ingredients:
2 ½ cups Flour
1 tsp. Baking Soda
1 tsp. Salt
STIR dry ingredients into creamed mixture until blended, set aside.
3 cups Quick Cooking Rolled Oats

Filling:
1 15 oz. can Sweetened Condensed Milk (Eagle Brand)
1 12 oz. pkg. Chocolate Chips (2 cups)
1 Tbs. Butter
½ tsp. Salt
2 tsp. Vanilla
1 cup Chopped Pecans
IN heavy saucepan, over low heat, melt: milk, chocolate, butter and salt. Stir until smooth. Stir in vanilla and nuts.
PAT 2/3 of the oats mixture in bottom of jelly roll pan (I end up using my fingers for the corners). Spread the chocolate mixture over dough. Dot remaining oat mixture over the chocolate.
BAKE at 350 degrees, 25 to 30 minutes. Cool, cut into bars. Will freeze well.


Russian Tea Cakes

Mix together thoroughly:
1 cup soft butter
1/2 cup sifted confectioners sugar
1 tsp. vanilla

Sift together and stir in:
2 1/4 cups sifted flour
1/4 tsp. salt

Mix in 3/4 cup of finely chopped nuts.

Chill dough, roll into 1” balls. Place 2 ½” apart on ungreased cookie sheet. Bake until set, not brown. While still warm, roll in confectioners sugar. Cool. Roll in sugar again.

Bake at 400 degrees for 10 to 12 minutes.

Makes 4 dozen

And Chris: if you don't mind adding BUTTER to your recipes.... Paula Deen has AMAZING cookies and pies and stuff. LOVE her red velvet cupcake recipe!

I totally forgot that i wanted to try the Can't Leave alones. I am going to put white cake mix on my list right now.

FYI- I am a cookie-a-holic. I could LIVE on cookies! Choice of cake, pie, or cookies- cookies will win every time, LOL
 
Okay my little Faery.....hopefully I can look this evening...I have not had time to get into my recipe books...I don't do online recipes...all of mine are from books that I have ( I HAVE A LOT) and hand written from releatives or friends or MY MOM :kiss: ...which would be my faves!!!

Do want candy too?? I have lots of those!!

The red velvet cookies looks delsih- but when I was reading the reviews, they said the recipe only makes 12 sandwiches. I didn't read over it carefully enough but I wonder if it would be able to be doubled? Or have the cookie size smaller?

They would look beautiful as part of a cookie platter. As long as I can give each person more than one!LOL
 
ooh I like this thread! A couple years ago my grandma and aunt sent me tins and tins of Christmas cookies! I was in heaven. And I guess the rest of my family were too since I had to let them eat some too! But Oh they were so good. So my kids like to help bake so I figured we'd make cookies this year. I am just feeling so crafty this year. Yay! So can't wait to see what you all post. I haven't red any yet. I will try to add some myself.

Our favorite is my mom's Ginger snaps! first on our list this year!

I knew it!! I knew we were truly truly one and the same!! I am a completely and total cookie-a-holic. That is my number one weakness. I can live with out cake and pie and everything else as long as I have cookies. you are really and truly my soul sister!!

I have no idea -- the chocolate comes out like fudge, so if you can freeze fudge....

My grandma freezes her Revue Bars (which I believe I posted) and they're kind of similar.

I was thinking last night that what I would really want for C-mas is to be able to eat all of the cookies I wanted and not gain weight/feel guilty. How *awesome* of a gift would that be??????

they both sound sort of similar to Magic bars which also freeze well. i think I'll try it. If they come out funky fromthe freezer- guess thatmeans I have to eat them!
 
Okay...I have pulled out some of my recipes....I am going to type them up in note pad and then copy and paste to this thread....will probably be the weekend....

All of these all sound so yummy!!!!!!!!!!!!!!!!
