12/18 QOTD: Baking

Do you do any Xmas baking? Do you buy from the store instead? Or not at all?

I don't usually bake much b/c I have no willpower and will eat way more than I should LOL. But at Xmas time I always bake a bit (and buy a bit). For sure, I'll be making rice krispie squares as my hubs loves them. I want something with peanut butter so instead of cookies I am going to try a bar recipe I found. I have often made Martha Stewarts Kitchen Sink cookies which I love but want to change things up this year so will find another cookie recipe to try out. We're going to bake on Sunday afternoon. Next week I will buy some butter tarts which we all love and they go fast on Xmas Eve when I put out all the goodies.

Usually I do Shortbread of course being of English/Scottish Heritage and then we love to do Nanaimo Bars, but I have no will power when it comes to Nanaimo Bar so only one batch of that. My Mother used to bake everything she could think of and oh how I miss her Eccles Cakes no one made them better than my Mom!! I really should try the recipe, but I doubt they would taste the same. :pout:

I don't bake ... never ... I don't like to do ... :)
we have a good bakery in the village ...
At Christmas I get two buches ...one with whipped cream and one with moch cream butter ...

I enjoy cooking but not baking. So I like making fudge. We use the fantasy fudge recipe from the Kraft marshmallow cream. Of course I do favor peanut butter so I just the butter a little and switch out some chocolate chips for peanut butter chips. I do like other people baking. I also love love love the simple cheap sugar cookies with sprinkles on them. They are usually in shapes like Santa or trees.

Nope I do not bake mainly as baked goods are high in calories and we have quite enough of those already.
I buy one pack of mince pies for the Christmas period and a tiny tiny Christmas cake which will give us a couple of small slices each.
My Mum was a huge baker we had loads of buns. Biscuits tray bakes etc but we expelled a lot of energy as kids far more than my kids did i.e. walked to school which wasn't possible for my kids as we lived way too far away.

I have been baking Christmas cookies since I was a kid, and my mom's friend would come over and teach me how. I think that if I didn't bake at least two of the "must haves or it is not Christmas" my family and friends would riot! Those are the walnut cups and walnut balls, aka Nut Tassies and Russian Tea cakes or Snowballs.

Before I got really sick, I would make close to 12 different kinds of cookies. Last year I cut back and this year I had to cut back even more. But the 2 Must Haves are in the freezer along with Pecan Pie bars. Today I will make Magic bars and at some point I will do the Toffee bars. And I have to sneak making Gary's shortbreads that I make for him every year.
Some have you already heard this story, but since is is disabled and home *all* the time, it is hard for me to make them w/o him seeing them. One year, they were cooling on the stove and I heard him coming downstairs. I grabbed the tray and hid it in my closet! :D

Last year, I made the Nanaimo Bars and OMG, to die for! They are a lot of work, so they had to be one of the ones that got cut this year. Fingers crossed for a healthy next year so I can make them again.

One thing I miss and should really give them a shot, is that I have my paternal g-ma's recipes for strufulli (no idea how to spell it)- little dough balls dipped in honey, and Love Knots -- the ones that are glazed with confectioner sugar.
Again, I am hoping for a healthier and more energetic next year :)

I usually make deserts for our family dinners, but this year we are taking it easy, so I bought some icecream!
I am baking chocolate chip cookies today! not sure they will last till Christmas!

Oooh! I love Eccles Cakes! Our neighbourhood bakery used to make them, but they closed down about a year ago :(

I made Christmas Cake for the first time this year with my mom. I have really cut back over the past few years but will still make Burnt Almond Squares and Caramel Toffee Squares. I also bought some shortbread this year.
