What's Cookin' These Days?

There's no place like hOme!
It's been so hot & humid here & now school started this week so things are extra busy - I feel like I'm in a rut with meals lately. Soooooo, I wanna know what's on the menu these days at your house? Give me some new ideas & recipes!
 
Ahhh...Lisa...I am the same way...seems I am cooking in circles...like I have the same thing every Monday, every Tuesday...and so on!! But you are right is hot and humid so heating up the kitchen is horrible!! And to boot, our grill stopped working....UUUGGHHH!

Let's see though....I do Meatball subs once in while....easy and tasty....I just buy the italian meatballs and cover with marinara sauce...then cut up fresh veggies and some shredded cheese on top, and a side of slaw (DH's favorite side dish)....It's a light meal.

I do fix once a week a roast....since I am home all day...I slow cook in the oven for about 6 to 8 hours...and the oven is turned down so low it does not heat the kitchen up too bad. That is my FAVORITE meal...with all the veggies included...YUM!!!

Besides that...it's usually casseroles, or just something I throw together!!
 
hmmmm, Lisa, hang on a bit and I will go and ask DH!! he is the cook in the family!!! :biggrin: but I don't think you are needing hot stews and casseroles at the moment!!! bwahahahaa!! :)
 
Recently did a nice salad with grilled chicken, lettuce, corn, black beans, onions and cheese. Kids asked me to make it again this weekend!
 
Yup, I am with Ona .... still needing foods to warm you up here Lisa! The other night we had a 'snacky' dinner and everyone loved it - dips, breads, carrot and cucumber sticks, cheese etc. It was yummy!
 
One of my quick and easy recipes is green chili enchiladas. You cook up chicken in the pan the way you like it. Add a block of cream cheese and a can of chopped green chilis. Stir until melted. Fill tortillas with the cream cheese mixture. Top with Green Chili enchilada sauce (I think Old El Paso is the best) and then bake. The recipe is on the Old El Paso can, but it calls for two cans of chopped green chilis. I also really like to crumble Tostitos over the enchiladas before serving.
 
Lisa this is a great thread...we have become to friendly with our pizza guy with the hectic schedule here! I am sooooo sick of it!!! Need home cooking...bad!
 
I also like doing chicken breasts in the crock pot with a can of Rotels tomatoes and chilies, then shredding the chicken and mixing in black beans.

We like Mexican food at our house. :-)
 
With our weeknight schedule this fall (soccer and/or gymnastics every night but Friday...and one night a week two soccer practices plus gymnastics) the crockpot is going to be my friend!
 
Did we have a crock pot recipe thread here at one point? Or was it somewhere else?
I know i said it last year that I needed to use the C-Pot more and I didn't. Maybe there is hope for me this year.

I have been sick and tired of cooking and food. I hate that no one likes the same foods and that the "cheap" affordable foods are also the unhealthiest.

Last night I did chicken kabobs and rice. That was cheap and easy.


Sara- I do a similar enchilada recipe, shredded chicken, sour cream, Monterey jack cheese, rooled up and the green sauce on top. I actually can get my whole family to eat that!

ITA Chris!!!!!!!!!! You try to buy things that are healthy and cook the right way...they don't like it...and your wallet is totally UNDER weight!!!

Chris this is my biggest pet peeve!!!! I am tired of turning onthe tv and hearing how overweight Americans are, that they are going to mandate junk food....I mean seriously??? How about we work with the farming community and give them breaks so that their costs are lower - hence our costs are lower for healthy food?

Yikes...I never soap box.....sorry! It just makes me mad :yell: that a cheeseburger from fast food is cheaper then a head of lettuce.
 
I absolutely LOVE these two..
The first one is the best for hot weather LOL

Easy to picknick lunch bread.

8 persons.
1 big round bread (something like Pain de Champagne

3 red onions
2 tablespoons of olive oil
1 eggplant
1 zuchinni
salt, peper
2 beefsteak tomatoes
2 roasted pepers (roasted yourself and take the skin off, or from a jar)
1 cream herb cheese (like boursin)
1 bunch basil
Grillpan

Peel the onions and slice them into rings. Heat the oil in a pan, and fry the onions softly. Let them cool off.

Wash the eggplant and zuchinni, cut them into long slices, roast them in the grillpan, put some salt and peper on it. Let them cool off.
Cut the tomatoes into slices, cut the pepers in to strips.

Cut of the top of the bread, take the 'inside' out.
Spread the cream cheese on the inside of the bread. Fill th bread with different layers, something like:
Zuchinni, pepper, basil, onions, eggplant, basil, tomatoes basil,,and so on.
Press everything good together, put the top of the bread back.

Wrap the bread in some foil. Bon appetit at your picknick (Or during a car drive or whatever)
You can also take small round bread, that way you can make for every person 1 little bread in stead of 1 big.

My all time favorite luch!!

1 petit pain
green pesto
chicken (the ones that you can add to sandwiches)
slices mozarella cheese (or other cheese)

Cut the petit pain in half, add pesto to both sides, put some mozarella on the bottom piece of bread, on top of it some chicken. Put the pieces petit pain together.
Take some aluminium foil, rub some butter on the shiny side of the foil.
wrap the petit pain into the foil.
Heat the package in the oven for 20 minutes at 180°c.

BEST lunch bread ever!
