What's for dinner?

Been a while since I checked in on you dinner plans. Tell me, what's for dinner today? Or tomorrow? Or whatever day you see this thread. It doesn't matter to me, I'm always ready to talk food.

I'm making this today:

I saw this a couple of weeks ago, and I wanted to try it. And yesterday, I finally found an Indian flavoured curry paste. (Seems like all curry paste in Sweden are Thai). I won't use chicken, of course. I will thaw some frozen cauliflower in hot water mixed with turmeric (to give them a nice yellow color). Then drain them, mix with spices & corn starch, and fry them crispy. That will be my "chicken".

Can't wait for it to become dinner time!

Let me know what you're eating. Don't have to be a fancy recipe, we all know 9 out of 10 dinners aren't fancy.

Love fried squash. And leftovers. We probably have leftovers 3 times a week. I always cook too much. LOL
Same for me, Eva! I can't get past cooking for 6 mouths, even after all of these years that the kids have been gone!

Last night was grilled pork chops and stuffing. Tonight is brauts with :ketchup:
Friday is homemade pizza. Monday burgers on the grill. Tuesday Lasagna. Cant remember what else is planned LOL I'm still cooking for 6 (one son eats for two, he's a teen) and so hardly have leftovers right now. Makes it interesting the days you want lunch and there are no leftovers. Oh yeah, enchiladas are soon!! I cant wait. I love Mexican foods.

Where having tacos on Friday. And we had lasagna yesterday.

I bought some ready to pop into microwave "bowls" at the grocery store, so I'll pull one of those out. Last night it was teriyaki chicken.

It's such a blessing that there are so many different options these days for microwave dinners. Even for us vegetarians.

We're going away on Sunday, so I'm just trying to use up what was in the fridge - tonight is roasted veg (potatoes, onions, cauliflower and zucchini) with barbecued fish that was in the freezer.

Those dinners often turns out the best. In Sweden we call it "kylskåpsrensning" (feel free to try and pronounce that :giggle4:), literally means fridge decluttering. Have a great trip!

I made broccoli and cavatelli the other night. Tonight is leftovers.
I am so bored with all food and meals :bawling:

Tonight is chicken cordon bleu, broccoli with cheese sauce, couscous with garlic and olive oil, and probably a salad, and rolls. Looking at this, I need to beef up the carbs a little. My Dad and I are diabetic and both have a problem with our sugar levels dropping too low if a meal is too light on the carbs. I know, doesn't make sense does it. Makes you wonder if the problem is diabetes or something else.

Tomorrow will be left overs I have some cedar planked salmon, some cheddar brats and the trimmings. Maybe we'll eat the salmon for lunch instead. It doesn't really go with potato salad, baked beans and coleslaw.

You ever notice its just women who feel this way? I look in the fridge and think blah I dont want anything we have. And hubs come behind and says wow look there's this and this and this. Want me to make this. And no I dont want what we have. Did you not hear me? I would rather not eat and be hangry. Hello! :giggle4: I'm the only girl left in the house and the 4 men just eat whatever is there and have never said nope nothing I want to eat. Why? Why do we get this added bonus of food dis-satisfaction.

I made a ratatouille pasta last night that was very good.
I roasted diced eggplant, zucchini, and bell peppers in the oven. While they were cooking, I sauteed onions and garlic and then added crushed tomatoes. Once the veggies were done, they were added to the pot. All of that got tossed with cavatappi.

To make it the best ever, here is a picture of a rat enjoying ratatouille
