Favorite Autumn Foods?

Yeah, yeah, yeah, I know. Most normal people enjoy the cooler temps and bright colors of Autumn but not me. There are probably only two things that I enjoy this time of year:
1. Halloween (duh! LOL)
2. Cooking/Baking

This past weekend I broke out two of my favorite autumn recipes and both are pumpkin-based-- pumpkin soup, and pumpkin crunch cake.

The pumpkin soup is a basic cream of pumpkin, similar to this recipe: Cream of Pumpkin Soup
The way I make it is onion sauteed in butter with thyme as the seasoning. I add 2 2/3 cups of canned pumpkin (sometimes I sub with cooked butternut squash), 1 qt vegetable stock (for vegetarian DD but you could use chicken stock), and half and half instead of the cream. That is what makes it "healthy" LOL

Pumpkin Crunch Cake recipes are all over the internet and on Pinterest. This is almost how I make it: Pumpkin Crunch
The only difference is that I use less sugar, more cinnamon for the filling. I use walnuts instead of pecans for the topping and only 1/2 c of butter drizzled over the top. My "healthy" tweak for this is to use skim evaporated milk ;)

I love making homemade pecan/salted caramel. I love making Pumpkin Whoopie Cookies~

For me fall is really about TEA. I drink so much tea during fall, it's silly. Don't know why or where I started with this. It's not any tradition that I'm aware of. I think it's just that I start to feel cold, and I want tea to warm me up. Have tons of different flavors to pick from. With a dash of milk and a bit of honey. You all know I'm a coffee gal really, but this time of the year, I drink a lot of tea.

I associate no special food with autumn, maybe rich stews and soups. But since we don't really have any big traditions in the fall in Sweden, I guess we don't have that many special food traditions either. Other than food related to what's harvested I guess. Like beets, carrots and such.

I love making soups and stews once the fall weather is here. I also like drinking either hot tea or hot apple cider in the afternoon to warm the body up. And my favorite dessert is pumpkin pie. Of course apple brown betty or apple crisp are also favorite desserts to bake (and eat) on colder days.

It would probably be soup for me. I love soup, but it's just better when it's cooler.

I like making soup but my family won't eat them most of the time so I end up freezing them often.

I also love making roast, with mashed potatoes and yorkshire pudding! Not something I make in the summer, ever :)
