Yeah, yeah, yeah, I know. Most normal people enjoy the cooler temps and bright colors of Autumn but not me. There are probably only two things that I enjoy this time of year:
1. Halloween (duh! LOL)
2. Cooking/Baking
This past weekend I broke out two of my favorite autumn recipes and both are pumpkin-based-- pumpkin soup, and pumpkin crunch cake.
The pumpkin soup is a basic cream of pumpkin, similar to this recipe: Cream of Pumpkin Soup
The way I make it is onion sauteed in butter with thyme as the seasoning. I add 2 2/3 cups of canned pumpkin (sometimes I sub with cooked butternut squash), 1 qt vegetable stock (for vegetarian DD but you could use chicken stock), and half and half instead of the cream. That is what makes it "healthy" LOL
Pumpkin Crunch Cake recipes are all over the internet and on Pinterest. This is almost how I make it: Pumpkin Crunch
The only difference is that I use less sugar, more cinnamon for the filling. I use walnuts instead of pecans for the topping and only 1/2 c of butter drizzled over the top. My "healthy" tweak for this is to use skim evaporated milk
