I am going to have to make this kind of short. I am having trouble with my eye and it is hard to see the screen. Every once in a while, I get what feels like a sty starting in my eyelid, and then it feels like the inside of my eyelids is coated with sand. I can't wear my contacts and my eye won't stop running so I get smears all over my glasses. Currently, I am peering at my screen, blinking and squinting and not seeing much of anything. It is better today than it was yesterday so maybe I will be good to go by tomorrow. Of course, today is the day I need to drive all over- Shop Rite in the am and then the vet with Caitlyn and Cordelia. I hate driving in my glasses so I will offer to hold the rat cage while Cait drives up the mountain.

I was busy almost all day yesterday, slowly starting to put the tree away. Caitlyn has been busy packing up her room. Almost everything Gary needs to do her floor is here so as soon as the underflooring -whatever that is- comes in, he can start ripping up the carpet. I have no idea where all of the stuff in her room is going to be stored. I am trying to move stuff around in my room but there isn't much space there either. I am really jealous though, her new floor is going to look amazing. It is a grey wood laminate and would look fantastic downstairs. If I only had even floors to put it on.

The glare from my screen is starting to hurt, I am going to do some quick personas and then sign off. xoxoxo

PS-- before I forget----- Cait got her grades in yesterday- Straight As!!!!!!! Not even an A-, but As all down the line. Not bad for a Masters Program. :whoo: She hates online classes but she works so hard. I am really really proud of her!

Trudy- I love those boots! Did you get all of the paint you needed? Scott *still* loves dinosaurs, his favorite is the spinosaurus. Mason will love his book/rocks. Not sure if you should tell him, but geologists lick rocks to help identify them, they can taste different minerals. We bust on Scott having to do that in his geology class- he is adamant that he doesn't like "sand." Hope that you were able to get a nap in!

Felis- I did get some help from the family cleaning up- Scott washed dishes and Gary vacuumed! :pound: We used to keep the tree up until after New years. My house is way too cramped but I like your tradition of keeping it until the 6th. Dilly is back to normal, but Cait wants to bring her in anyway to figure out if there is an underlying condition to treat. Thanks for thinking of her!

Rae- Oh thank goodness!!! That must be a huge relief to see B improving. Have they been able to figure out what caused it? Still sending huge hugs~~~
How is Jen holding up? Give her a hug from me too. That is a bummer that the mail hasn't come yet, our mail is all messed up in the US as well.

Cheryl- So very excited for you and the house. It has to be crazy trying to get anything done with everyone popping in and out. I hope you are sleeping like a rock and are re-energized!

xoxo

Chris I so hope your eye is better soon. That sounds miserable. Congrats to Caitlyn on her terrific grades.

Chris as I was reading through yesterday's posts I noticed you mentioned an Instant Pot. I have two, and use them both, and it's just me here. I had a smaller one, then my DIL got one, never used it and gave me hers, which is larger than my original. I use hers for soups and stews because it holds so much. I basically use my regular IP every day. I eat mostly whole food plant based, only meat occasionally socially, so I don't cook meat in it, but I'm sure it would be okay for that too. I stew apples in it, cook both sweet or white potatoes, dried beans, oats quinoa and other grains, vegan casseroles, etc. I hardly ever use my stove anymore. My family wanted my chocolate chip zucchini bread for Christmas, so I used my oven for the first time, probably, since last year. No, wait, I seem to recall when my sister visited last spring we used my oven to heat buns for my barbecue soy curls. The IP saves me a lot of money. I honestly couldn't live without it. There is also an air fryer attachment for the IP, but I haven't gotten one yet. Might try it someday.

I was supposed to have Christmas with my son and family on the 26th. The night of the 25th it dropped down to eight degrees and we got quite a bit of snow. My son lives in a community out in the country and they share a well. The well pump froze up the night of the 25th. By Saturday night they got their water back. And by Sunday we could travel his road fairly easily, so celebrated on Sunday. Since I don't have four-wheel-drive, they picked me up and brought me back later that night.

By yesterday, enough ice and snow had melted, that I could navigate their road okay on my own. So, I went back out there and we watched my friend's memorial service on Zoom together.
They have lived in that community for ten years now, and it's the first time for a frozen water pump. We chalked it up to 2020! What are we going to blame everything on next year??

Good morning ladies. Today is errands, chores, watch some movies with D and groceries. Might fit in some scrapping and reading my book later.

Bailey seems to be improving, that is so good. They still don't know the cause but at least they were able to treat the symptoms.

Chris - that is awesome about C's grades! What a smartie she is! You must be so proud. Hope your eye will be ok.

Betty Jo - I use my IP all the time too. I was keto/paleo for yrs but this yr switched to plant based/vegetarian and have been happy with it. If you have any good recipes, pass them on. I'm still learning what I like after yrs of not eating grains, beans and starches.

Morning ladies... it is grey and foggy here this morning and rain for the rest of the week. :mmph: Yesterday was a quick trip to get my paints and then back home for a nice long walk with my Gary. We found some new trails near us and then went to see what the waterfall was like just a short distance from our house. It was spectacular here is a photo.

Today I will be busy vacuuming and washing the floors, other than that I will start to work on my painting again and will need to put in a phone call to the client to make sure I know exactly what she is wanting. Although that seems to change from day to day LOL. I managed to find what I think she is wanting in the way of colours, so I will have to get busy with the mixing up of the paint and covering the canvas with fresh gesso. My sister is also wondering if I would make her a business card for her, she is very busy with orders for her touques and now she is also making ear warmers too. She is getting overwhelmed with orders! How nice for her!!

Chris - I sure hope that your eye is better soon! Could be a case of Pink Eye maybe?? If so you can get over the counter drops for that now. Yes I love my new boots too and managed to get the exact same style in a half size bigger and they fit perfectly and are so comfy!! WTG Cait on getting straight A's, but then we all knew that she would!! What a smartie pants she is !! You and your Gary must be so very proud her!! Give her a great big hug from me! I will have to let Mason know about tasting his rocks LOL. I wonder if he already knows that little tidbit? Heather is not having a good day with Hunter again today, he only slept about 3 hours last night, sure wish we knew why?? But then again he is 3!! LOL.

Felis - We keep our tree up until January 1st usually and the my DH is ready to get it all packed away and get back to normal LOL. Men don't like change very much! Ha, Ha you sound like my MIL no one does anything the right way, which of course is her way LOL.

Betty Jo - Happy that you finally got to have your Christmas with your son! It is awful when we can't get together because of horrible weather conditions! I love my instapot that I got for Christmas and am now on the look out for some more great Keto recipes for it! I need another binder to keep my instapot recipes in now. Another project for me LOL. I think that we will still be blaming everything on Covid for 2021 as this is not going to go away anytime very soon. It will take a long, long time to get everyone vaccinated!!

Rae - I am so happy to hear that B is improving so quickly! Isn't it strange that they have no idea what caused her to deteriorate so fast! Another virus of some kind perhaps?? Who knows, but we are all glad that she is on the road to recovery that is for sure!! A huge weight off of your shoulders and another bad memory chalked up to this crappy year!!

Alright I better get a move on with the cleaning before I can get to the fun stuff today! Have a wonderful Tuesday everyone!

Rae, I hope Baily continues to improve and a cause can be found.

I was paleo for a while too but developed such joint and arthritic like pain that I had to go a different route. I now basically follow Dr. John McDougal's plant based way of eating. Both my granddaughters work at a local gourmet burger place, one hoping to own her own someday, so I do eat there occasionally with the family and have a stripped down elk burger. :)

Some of my favorite recipes, that my non-vegetarian family and friends like are here: https://www.brandnewvegan.com/ Check his recipe index, he has some IP recipes too. My fave recipe of his is BBQ Soy Curls (not IP): https://www.brandnewvegan.com/recipes/texas-style-bbq-soy-curls

Also, the recipes, here by Shane, especially his sweet breads. My family loves his zucchini bread, which I add chocolate chips too: https://shaneandsimple.com/recipes/

One more, although I have other faves too: Forks Over Knives https://www.forksoverknives.com/recipes/ Their No-Tuna Salad is awesome. I buy their magazines every three months at my local grocery store and love the recipes in them.

If you like stewed apples, this is my IP recipe (can be doubled or tripled): Three apples (I generally use gala or whatever happens to be on sale) peeled, cored, and sliced thinly. 1 tsp cinnamon (I often use Apple Pie Spice), 1 TBL maple syrup, or to your taste. Put all in IP with 1/4 cup water. Stir it all up so the spices spread over the apples. Cook on high pressure 2 min with quick release. Ready in minutes and so good. Especially on morning oatmeal.
