Do you like Mozzarella Sticks? And Grilled Cheese?
OMG the sandwiches I made for dinner last night were ah-MAY-zing!
Here is the recipe again: Fried Mozzarella Sandwiches on Herby Garlic Bread
They really tasted like Mozz Sticks but with some nice herbs mixed in. I tweaked the recipe a tiny bit, it seemed like a stick of butter was way too much so I used 4 tbsps spread over the 6 slices of bread. I used dried parsley but added some fresh basil and thyme. It wasn't the easiest recipe to make- breading the bread without the cheese slices falling out was not as simple as it sounds LOL- but so delish. I also didn't use as much butter in the pan as I was grilling them (as if that makes *any* difference in the overall fat content Bwuhahah)

That was the highlight of my day and I am still stoked about it.

What else did I do? Picked up my groceries, paid some bills, and knocked a double-headed ax over when I was cleaning. You know the kind that everyone has in their house like this one:

Luckily it didn't fall on me or anything other than the floor. Whew.

I am heading down to visit my parents today, the first time I have seen either of them since their surgeries. My dad is giving his physical therapist a hard time from what I hear. He does not listen and refuses to use the walker in the house. He tried to "take a shower" by sticking his head under the shower without getting the rest of him wet. #dk
Stubborn man.

I am sure I will have lots to vent about when I am here tomorrow. Send "Patient DD Vivbes today" :)

Ok...absolutely going to try these sandwiches. I love grilled cheese and mozzarella sticks so I'm sure that these would be a hit at my house. Syd's meal plan is going to be declining balance. I just put money on her card and she can use it to eat in the school cafeteria. She chose a dorm with a kitchen for 4 of them so she can cook. That means we are trying to figure out how she does that. For example, yesterday she made herself a breakfast bowl with rice, potatoes, chicken and eggs. Added some seasonings and hot sauce and voila. I told her we would supply the kitchen with her favorite spices and sauces and not to worry if roommates used those. We would just buy more. What an adventure this whole thing will be.

@BrightEyes The Rad Hat lunch must have been a blast and very nice of the ladies to help you clean up. Although, I am not surprised that you still ended up on your feet too long. I hope you were able to keep it elevated most of yesterday.

@tanteva In the US, WWDITS is on Hulu. It is one of the funniest shows I have ever seen and apparently is it about half scripted and half improv. It is NSFW however, so be warned :eek: Yes, it was easier when there were only a few TV channels then you had to get up to change the channel LOL
I am sorry that you have to go to a place you don't like but it is very kind to honor the woman who passed

@taxed4ever How was the hike, the weather was ok? Yay for getting the flights and being able to use some coupons/miles for it too.

@bcgal00 I am hoping that alllll of the computer gods are with you today as you move stuff to the new EHD. It sounds like an enormous project.
Good luck on catching the babies in a photo, but just getting to see them has to be very rewarding. Gary was trying to watch a baby bird learn to fly the other day, by the time he got closer to the window they were gone.

@Cherylndesigns That is really so sweet and appropriate (IMHO) to give Asher a place to let it allll out. His dad seems like he has a stick up his butt to put it "nicely" (sorry if I am speaking out of turn) How can you tell kids to be quiet all of the time? Boys' natural state is chaos, they need to find a safe and decent way to channel it not stuff it closed (again IMHO).

@LSlycord Sending you and Shaun good luck vibes for the appt today. I hate to say that I hope they find something, but at least figure out how to fix it.
Caitlyn got blood work done last week and ANA is positive which can show autoimmune disorders. She was so excited that "maybe" they can figure out what is going on with her. I feel horrible b/c she has tested positive for ANA before, it is linked with the Lyme inflammation (similar to me being "positive" for RA). I 100% understand the frustration of knowing there is something wrong but not knowing what and how to make it better.

Thatis really exciting to be getting the stuff all set for Syd's dorm!!

Kay - that has to be interesting and exciting to watch the guys work, the yucca must have been in there deep. Can't wait to see the pics!

That is awesome that she will have a kitchen, so excited for her :)

Finally up-loaded the photos from yesterday on to the computer this morning..... 69 of them!!! Oh, my.... I will have make a few pages with them! It is so nice to look out this morning and see how nice the front and back yard look. This is the difference between the front with the yucca and now that it is gone:

It so open and welcoming! And the bonus is the big plant in front of the living room window is now trimmed back into the rounded shape and let's more light in.

No, I didn't stay inside and rest the leg yesterday while the work was going on. I would pop out and take photos, then back inside, then back out to take more photos while the work was going on. I was trying to catch some of the major work/changes while they were happening. As 3 were working in the backyard while 2 were working in the front yard.... it meant that I was going back and forth to catch those major changes. Today I will be resting in the recliner with the leg elevated to let it recover from being up on it more than I should have been for the past couple of days. Since sitting at the computer means the knee is bent, I will have limit my time doing any computer work for the next few days.

Morning ladies... Well we are back to rain again today. What a crappy June we have had! Oh well yesterday at least was a nice day! Our hike was a very tough one, but we all made it LOL. Not as long as last weeks, but so very pretty and with great views as we had our lunch. Everyone was in a great mood and we had lots of laughs, so fun! It is so good to have that social outlet even if it is only one day a week. Next Wednesday I will be staying home as the guy is coming to do the install of our screen door. It's ok though as the next hike is quite far away, so I will save on gas at least! We have one hike that is going to be way out on the West Coast and will take a few hours of driving time to get to. It is a spectacular hike, so I really want to go. One of the other ladies and I were talking about maybe all of us renting a small bus to transport all of us out there, between a bunch of us it shouldn't be too much $$. We are going to look into it. Today I have to get FIL's card made for Father's Day, I am going to try my hand at making a never ending card, never done one before, but it looks like fun! Hope to finally finish off my page for Rae's birthday challenge and do some more catching up here also. The days just fly by and I can't believe how quickly the hours pass by! I suppose that is a good thing, it means that I am busy! I was so exhausted after the hike yesterday, that I just climbed into the jacuzzi tub and soaked for a long time. So never got anything else accomplished except to make dinner for the two of us. Went to bed early and slept right through the night. We are having everyone for dinner on Sunday, MIL, FIL, SIL Linda and her boyfriend. We have a turkey that we need to get out of the freezer, so that will be served. Keto things for DH and I and I have asked SIL to bring potatoes for the others. Will make a cheese cake for dessert. It will be an early dinner so that everyone can make it back home before it gets dark. We offered to bring up the cooked turkey etc to MIL's & FIL's but MIL said she would rather come to our house. I was surprised as she has a hard time with the stairs and FIL' driving. Anyway enough jabbering from me.

@faerywings - Your mozza sandwich sounds and looks very yummy!! I can't imagine how many carbs are in it LOL. Wish I could eat it but my stomach would not be happy with me!! I make a really good cheesy zucchini mozza bread that DH and I both love, that is as close to your recipe as I can get. I hope you have a great visit with your Mom and Dad today! Oh boy do I know about stubborn old men LOL. Hope your Dad listens to you and does his PT exercises and starts using his walker! MEN!!! Try to be patient with your folks, although I know that is not as easy as it sounds. I am sending you lots of zen like vibes and I do hope that you have a lovely visit with them! PS Why am I not surprised that you have a double sided axe in your house??

@LSlycord - It will be a work in progress trying to figure out all this new dorm stuff I am sure! I hope that Syd is very happy with her choice and that she settles into dorm life quickly and easily! Sorry to hear that you have to wait a few more days for Shaun's appt. I sure hope that they can figure out just what is going on with him! Sending you a big ((((hug))) as you deal with all of this!

@tanteva - KETCHUP on spaghetti??? REALLY?? Say it isn't so!!

@BrightEyes - Oh the front of your house looks so much better now! What a great job they did! You must be so happy with it! Hope you are keeping that knee elevated today, you must have been putting on the miles going from the front to the back taking all of those photos!

@bcgal00 - Did you get to the river to see the flooding? Sure hope its not as bad as in Kelowna!! Saw that on the news last night, what a lot of water, bet you are glad you are in Kamloops and not Kelowna!! Hope the transfer of all your photos goes smoothly and that light room is working well for you now!

Asher's still sleeping so I got up to check in. Chris @faerywings you hit the nail on the head about his dad! He can be a not so nice person. He has NO patience and with a boy, you have to have a lot of it, as you know. He usually doesn't walk, he runs. His dad is a jerk to put it nicely.

I need to try your recipe, but can I tell you I made the best sandwiches last night? I fried eggs and we had egg, cheese and mayo sandwiches. Asher ate his and half of mine and my stomach is growling right now thinking about how good they were. He said he wants them again today. LOL We're supposed to go to Adrienne's for dinner this evening, so I'll make him one for lunch. I think you incentivized me with your sandwich recipe. SEE- there's NO way I could be a Vegan - plus we had cottage cheese on the side. Hahaha

Linda @LSlycord that's crazy that you're getting stuff for college! I remember when we did that - it didn't last long though. Adrienne went to college that was just over in the next town, but decided to live on campus. We worked on her dorm room and it looked great - I even got her an oriental run like the ones I had. Well, she hadn't met her roommate and she didn't show up until the last minute. When she walked in, she had on cammo and combat boots. She was in the ROTC - not that there's anything wrong with that, but Adrienne was and still is a "girlie girl". Well, needless to say, that pairing didn't last long. She called me, in tears, and said she couldn't live there. So, we went over and packed all of her things and she lived at home and commuted for the rest of her 4 years. We still laugh about that.

Kay @BrightEyes your home is gorgeous!!! Even the "before" picture. Thanks for sharing them and keep off that knee today.

I'm going to scoot - got lots going on in my BD challenge and am trying to keep up.

Good morning ladies. I'm kind of in a daze right now until the coffee hits my blood stream. Didn't sleep much at all last night, mostly watched tv and dozed. I think I got about 3 hrs sleep. Yesterday afternoon I sat outside, on a chair under the stairs, hidden from the birds. I got to watch the babies being fed and judging from how often mom and dad are feeding them, they will soon need to get out of there and feed themselves b/c they are always hungry. I have photos of their wide open beaks and sometimes their little heads are poking out. I finished my book (The Good Sister). I think that is the second book I've read since moving. I want to get back into reading again so started Hail Mary, it's a long story so will keep me occupied for days.

On the recommendation of a friend, I had booked an appt for the dogs to get their nails clipped and took them yesterday. She is wonderful. She opened her own grooming shop in her home. She is thorough and cheap. We chatted for awhile afterwards. She loves photography too. She has a busy life but wants to join me on photo walks sometimes on Fridays as she generally doesn't book clients that day.

I never got around to scrapping much yesterday, I was too busy with the birds but today I want to do some scrapping, while watching the birds off and on and will start transferring files later tonight (the EHD arrived). Tonight I take D to the Wound Care Clinic to have his fistula cleaned and dressed. He has to go again on Sunday. They are taking great care of him.

@faerywings Hope the visit with your parents is a good one.
@BrightEyes The landscaping looks great! You home looks beautiful.

I'm going to get more coffee and maybe read a few pages of my book.

I actually like ketchup with eggs - if I'm eating them on a plate. It's such a great combination! I put ketchup on Mac N Cheese, too.
