Hey ladies!!!! ITS MONDAYYYYYYYYYYY!!!!! Well, my Friday, hehehe!! Prepare yourselves for a novel...
I'm pumped -- in the mood to do fall cooking! I finally got confirmation that Jeff's work is giving us a free turkey again this year for Thanksgiving!! Woo!! It's their tradition... no idea if it has to do because they're a tribe, but we also get a Christmas ham!!! So now all I have to worry about is the sides!!!!!!
So, Jeff's only home for two dinners a week -- a bummer, but on graveyard he also really didn't participate in dinner because he'd usually want breakfast or he'd be sleeping. I've been planning our "nice" dinners for his nights off... this Wednesday we'll be doing this recipe:

If I remember right, my mom did something similar with pork tenderloin... and the recipe was from a magazine... but I can't find it! Jeff has a major love for gingersnaps apparently, so this will be worth testing on him!

Since we're trying to save money & cover bills for the in laws since my FIL got laid off, I needed something simple & easy. It's also our goal to have the American Express card paid off before the end of the year, and our biggest expense aside from bills is food. I hate having to stand at the stove and cook meals, and even Jeff agreed that it's the time of year for crock pot dinners! So, here comes cheap but yummy crock pot meals! I'm going to be making meal plans for the week & buying based on the sales & what I can get on clearance at F&E.
Oh, and speaking of recipes... check out Molly's newest templates -- OH MY GOODNESS!! Where were they two weeks ago when I was losing my hair over my BIL's cookbook?

Ok, Jeff just got home -- with a handmade thank you card from his officers!!! They loved the Can't Leave Alone Bars!
Speaking of those bars, today I'm getting back on my feet & power walking! I tried on my fave corduroy skirt for the holidays... and the waist is too tight. I tried switching back to being a vegetarian & cutting out starches, but my stomach issues reared their ugly head. So, as soon as we wake up... I'm going to power walk the city block once or twice with Riley, while Jeff runs!
I think I'm going to go curl up in bed with some hulu or PBS and wait for Jeff & his corporal to finish playing video games.
