It's Monday and if you are like me, an extra cup of coffee is a gooood thing!
Did you all have a nice weekend? Hope that you got some time to relax since I know many of you were busy with your families and house/yard work.
I was happy yesterday. Very busy, I was in the kitchen just about the entire day. But happy and more relaxed than I had been all last week, "bout time, right? I didn't need to head out to the store, I pulled stuff out of my freezer and cooked that. I made pulled pork and vegan "ribs."
Can any of my Southern friends share a good, sweet/spicy/sticky sauce recipe? I had no bottled BBQ sauce so I found a recipe for Texas-style BBQ and made that. I wasn't crazy about the recipe I used. Too vinegary. But it worked out fine, everyone was here and happy, and in the grand scheme, that is all that matters.
It's finally going to be back in the 70s today. It was too darn cold this past week. My goals for today are to get as much done as I can inside this morning and then work outside this afternoon. I have to make some calls to run down info with my Dr (man- I hate his office, they mess up Rxs like no other). Then I need to call the septic company to get them to file paperwork with the town that they didn't send last year. If everyone could just do their jobs it would make life so much better for everyone. Sure everyone slips up on occasion- but my Dr. office botches Rxs literally 9 times out of 10. (OK, OK-- literally might be 8 out of 10 )
I cleaned my kitchen as I cooked/baked but it still needs some more work. That should be most of the inside cleaning part. Ugh, I forgot about

I should do some yoga, I didn't have time to do it over the weekend and maybe that will help get some of the stiffness in my knees/ankles loosened up. I'm still feeling a little bit of joint pain but it is 100% better than it was last week. Whew!
Don't forget to put self-care on your to-do lists either, my friends!
