Journaling: My great grandmother, Ellen Rocho, started a box lunch company in Omaha, NE shortly after World War I called Rochos Box Lunch. She had been left alone, penniless with four daughters to raise. She opened a rooming house and started making box lunches for her boarders. She started as a one-woman kitchen and ended up with a bakery and a fleet of trucks that supplied box lunches to local workers over town. To me it is amazing to think of one woman who, while trying to figure out a way to support her family, in the end becomes one of the first industry leaders in baking and cooking in Omaha.
