Good morning, lOvlies! :loveangel:

Another week is done and I am still working on not freaking out. It's been rough but I think I'll be good for a few more days. Next week, all bets will be off and you'll see me shrieking through the forums until I wear myself out. Then I'll be curled up in one of the quieter forums or galleries in the fetal position, hiding. :hiding1:
But for today, all is well.

We always have such a good time baking together but this time, Caitlyn and I were both a little anxious. This was the first time we baked vegan Christmas cookies that were copycats of the traditional ones. It was very hard to not compare, both in the process (the doughs felt very different) and the taste (the textures were also different). However, we think they came out as good as "not-compared ones." They tasted good as a "cookie" just not as MY Christmas cookies. If that makes sense. LOL!
The other thing Cait and I had to laugh at was the vegan butter-- it gets to room temp *much* faster than regular butter. No need to put in her waistband to warm up.
I have to share the photo for the newer ladies here. It's become a small tradition that I do that. I don't want any of you to feel left out :p
I'll find/post it next.

On the bummer side of the day, I am a little concerned about how I am going to hold up for the long day on my feet. My knees were really sore and achy by mid-day and we only baked 6 dozen cookies. Tomorrow will be like 12 dozen of the one kind and 6 dozen-ish of the other. I'll drag a chair into the kitchen if I need one.

I have a full day today- I am picking up the photo album and will hit TJ Maxx for some stocking stuffers on the way. There's a work holiday party in the afternoon, not too far from my house. I'll be back home before dinner just in time to cook, eat, watch tv, and get a good night's sleep.

@BrightEyes I was hoping to have time to do your Border Challenge yesterday but I forgot that I had a Foxeysquirrel CT kit I had to use. Maybe I can squeeze some time in over the next few days to scrap. Your LO was awesome!
So glad that your DD#1 is doing OK too.

I love you too!! I am very open-minded and try to be as respectful as humanly possible to all belief systems. I personally never could get myself to the "faith even when it doesn't make sense" stage. I almost didn't get my first Communion because I questioned the Monsignor why God would care if I couldn't recite the Hail Mary perfectly. Wasn't off to a good start, eh? LOL
TY for sharing your beliefs with me and your acceptance that I am/can not do the same. :hug3:

@bcgal00 You truly moved to the best area ever-- it seems like there is everything in the world for you to learn and enjoy. Cookie decorating takes way more patience and steadier hands than I have but I bet you did great!

I have learned to use flour over corn tortillas for a lot of recipes. I'll try that the next time I make the enchilada casserole recipe.
Seems to me that AK drivers are a lot like NJ ones, except that NJ drivers never get to the "decent part" of the season Heh.
Hope that you had time to relax and are not in as much pain today.

Trudy- wow, that is a lot of snow days for the boys' school eaten up and it is only December 13!

Ilene is on the way to pick me up. I'm going with her to the DMV to renew her license and then we will eat and come back here for games.....probably.

Morning, gals. Yesterday did not go quite as I had planned. I got involved in getting a couple of LOs uploaded to galleries when DD#1 called. So, of course, we chatted for almost an hour. She is doing okay and mentioned that she was smart enough to stay downstairs on the couch when she got home from the surgery. Think she will do that for a few more days until she is more steady when she moves around. She was getting the cast put on yesterday afternoon. The next thing I knew it was almost noon and the Library Book Nook (where the used books and DVDs are sold) closed at noon. As I wanted to check there for a couple of DVDs, I decided to wait until today to go. I was still in my PJs at that time (yes, it turned into another PJ day) - so I got dressed as soon as I got up this morning. Will do my running around today instead.

Oh, @faerywings ... I remember when you first showed us the photo of warming the butter for Christmas cookies!!! It is just as funny now as it was then... :giggle4: :rotfl::floorlaugh: WOW... you and Cait are baking up a storm!!! I am sure everyone will enjoy the cookies. Not sure that anyone will notice that the vegan cookies taste different than "your normal Christmas cookies". Yes, do be smart and sit as you work on the next batches if you can.

Don't stress over getting the Border Challenge LO done... the Challenges are open until the end of the month. Oh, I love the new Foxysquirrel kits... so good to her back designing. I love them all!

@taxed4ever That is one ugly sweater and it well deserves winning the contest! :floorlaugh::rotfl::floorlaugh: Glad you and hubby had fun on the hike. Enjoy the trip and being with loved ones over the holiday.

@vickyday Sure hope the car is finally fixed and back home. Yes, I understand why you feel like one of the widows even though you have married again. You have been through the pain, feeling lost, and grieved - so you understand them and the challenges they endure. You are a wonderful caring friend to them. You are so good about taking Ilene to get her license. Just got word that the local MVD is closing permanently in 2 weeks... will have to go the one down in Albuquerque (about 2 miles further away) when I renew my license next year.

@Cherylndesigns did you find some bargains/gifts when you all went to Walmart?? So glad you have the girls there to be with you during this first Christmas since Chuck is gone. I still find the holidays a challenge since DH is gone.

Happy Friday everyone! It is too dark outside to tell what the weather is doing so far this morning, but the app on my phone is calling for lots of rain over the next few days. I had a good day of getting some things accomplished, but still have not started wrapping gifts yet. That will have to wait until the weekend as I am off to the hairdresser's this afternoon. I found a couple of cute things to give to my hairdresser for Christmas yesterday and I managed to get a card done for her too. I think that I am done with the gift shopping and I feel like I can now take a breath and relax for a bit. I do have this nagging feeling that I have forgotten something though. You watch it will come to me the day before Christmas :eek2:. So this morning I will have a chat with Heather and hopefully the boys are back in school today! I will putter around in my craft room, but more importantly I will get the coupons ready to send to all the challenge winners. I have to wait until the 12 days sales are over, to be fair to the designers who are already selling at such amazing prices. So if any of you girls are wondering what is taking so long, that is the reason. No Christmas parties tonight, it will be good to stay at home for a few nights, then the final one for us on Monday evening I think, I better check the Calendar. Last night's was very nice, it was a catered buffet style meal and the food was very good. Lots of people dressed up in costume, it was a 70's disco theme and there were a lot of great outfits!! Prizes were given out and then a few raffle ticket prizes, but my luck has been all used up and we did not win anything this year. That's ok I love the prize I won the other day! Nice thing is I don't have to use the tickets to the gardens this year, they never expire, so if can't find the time to go this winter we can go next year. The Christmas light show is on until the 6th of January, but we fly home on the 7th. I think the only time we could go is this Saturday, but its supposed to pour rain and that would not be fun to have to be under an umbrella the whole time.

Wow that is a lot of cookies you are making! Yes please, grab a chair and sit down once in awhile! My MIL sits in her walker while she is baking, she seems to have a good system worked out, as she makes FIL put the cookies in and out of the oven for her. Keeps him busy LOL. I am sure everyone will enjoy the baking and I know that they don't taste like your cookies, but its nice that you are doing special baking for your Son-in-Law!! Have fun at your work Holiday party today and I hope that the photo book turned out wonderful!! I bet you did an amazing job with it!!

Totally makes sense. They're not your cookie but on their own they're a good cookie.
This is how we got 2 lbs of butter to room temp without melting it one year!

We have long winters, so eventually everyone settles down and just drives. Most understand that if you ditch your car, its a cold long way to help. I think that helps people be a bit more considerate.

Sounds like you needed PJ day yesterday instead of errands. Hope its not too crazy today running errands as its Friday. In December. Hope you get it all done and aren't too tired.

Oh I dislike that feeling. The feeling you have missed something and it just nags and nags at you. I started years ago making a list on my computer who I am buying for, who I need to buy for and then what I buy or ideas. Check marks mean its ordered and crossed off it arrived. Then I know I dont forget anything. Its helped that yucky "forgot something" feeling to go away. Also took stress with it. Allows me to shop early and not over buy.

I wont spend as many hours as Chris in the kitchen but it will be close. I have to make a birthday cake and then pizza for 11 people. Today is one of my kids birthday celebrations and we're doing family dinner. Will be fun but my hip has been killing me for two weeks and the thought of standing isn't pleasant but once I am up it will be fine.

Chris I saw this and thought of you. Made me giggle.

It's dark and gloomy and raining a little bit, but that's okay. We've had a few beautiful days earlier in the week.

Kay @BrightEyes thanks for thinking of me - it's hard. As long as I stay busy at my computer I do pretty well, the rest of the time, I just kind of wander around. We didn't find many bargains yesterday but we weren't in there very long. Adrienne doesn't do well at Walmart and yesterday was "in and out". I had ordered something for my GGD from Amazon but found out yesterday that it won't arrive until a week after Christmas. I cancelled it and we found a doll bed and I also got her a pj set for the new doll Adrienne got her. I'm officially done with Kinleigh and her "big" brother, Case, now. I got him a remote control car.

Chris @faerywings and Tracy @AK_Tracy both of you be careful of your "hurts" and maybe you can use a chair as a "helper". You know, like those little carts that people with injuries use? I think I saw where Kay's DD has to use one. Standing for hours in the kitchen can really get to you and sounds like you two will be doing that.

Chris, I'm glad the vegan cookies are "ok" - certainly not "your cookies" but ok.

Trudy @taxed4ever I know you're getting excited for your trip and how fun for all the parties.

Vicky @vickyday Ilene is so lucky to have you. I just had to go to the DMV this week because I lost mine. It's only been missing for a week or so - last time I had it was when we picked up prescriptions. We have to show ID for some of them. I truly think it's under the front seat of the car, but I'm not a very good "finder". Anyway, I got it replaced plus they added another year on top of the expiration date, which was in 2025.

Cakes baked, curd cooling, pizza crust assembled and rising. Kitchen is a MESS!!!! happy place!! Butter cream to be made, pizza sauce and toppings to prep. Then in 4 hours we bake the pizza and eat the cake! In the mean time, McDonalds and Dodd with a cold beer. 30 minute break with feet up.
 
I am back home.. and ready for a rest with my feet up, a hot drink and a book to read. :D I called the main library where the used book store is at 9:30 and it was still closed (usually open 9-12). So went over the one closer to the house and turned in the books. Of course, I found 4 books to check out there. Had the librarian there call the other one and YES... the store was opened by then. So drove over there (3 miles away). They did not have the DVDs I was hoping to find .... but found 7 DVDs that I wanted so it wasn't a wasted trip. :rotfl: Then over to the Friends of Literacy used book/dvd store. Found another 4 DVDs to add to my collection... :floorlaugh: Then stopped at the Senior Citizen Center to checked out their library and took out 7 books from there. (No due dates on returns there so have plenty of time to read then return them!!) Think that may give me enough books to read until after Christmas. :floorlaugh: :rotfl: :floorlaugh: I was more than ready to head back home.

Received a holiday card from a friend that I had lost track of... she had moved 3 times since I had her last address. Gave her a call and we talked for over an hour!!! So nice to get back in touch with her again. I stopped sending Christmas cards 2 years ago when my hands were too bad to do it. I am more of the "pick up the phone and call" now. So glad I have unlimited calling on my phone. :girldance:

Think supper is going to be whatever I can find in the fridge... maybe I will dig out a piece of pumpkin pie!

ETA: I almost forgot to tell you about a surprise I had when driving from the 1st library over to the 2nd one. Note: the road leading to the 2nd library runs between the large High School campus and an up-scale neighborhood. Just as I got beside the large High School auditorium, I notice an animal loping across the road (at the crosswalk). I slowed down to a crawl and looked closer to realize I was looking a WOLF trotting along as if he owned the area!!! I knew that Mexican Wolves are known to be in the area but it is first time I have actually seen one... and was so surprised that is was in the middle of a neighborhood!!

Oh girl now you're just making me feel bad. I've been sitting on the couch, looking at the tree and watching TV. No cookies, no cakes, no mess. I meant; have a chair next to you to rest your hips/knees/whatever on. Standing up for hours is torture. But sounds like you have it under control if you're sitting with McDonalds and a cold beer with your feet up. YAY you!!! :yourock::drunk:
 
Kay @BrightEyes that's so cool that a wolf was just loping along. I hope it stays safe. We haven't had a wolf on the property yet (that we know of) but we tons of coyotes at night, especially when it starts getting cool. I love listening to them "talk" to each other.

Well, Ilene picked me up around 10:30. We went to breakfast and had a wonderful Bashful Blueberry waffle that was double YUMMY! Then we headed over to the DMV and got in line around 11:45 but since we didn't have an appointment we had to wait until 12:00, send a text to a certain number which responded with a ticket number and instructions to return to our car and wait for further instructions. Ilene doesn't have a smart phone, so I had to do this for her. We waited until I received a text telling us that we could go to the lobby to wait. It was almost 2 before she was called back to renew her license. It took 5 minutes! How aggravating! Anyway, we then went to eat a late lunch and I bought something for Mark so I wouldn't have to cook after I got home! :giggle4:

We stopped by Ilene's on the way home because she said she had something for me. She gave me a beautiful red poinsettia! What a sweetheart! Then we came to my house. She went back home. She called me when she got home and about 5 minutes later we got the call from the auto mechanic that he "thinks" he finally got the car fixed! WOOHOO! We left immediately to get it. He would not let us pay him yet. He said to drive it for a week to make sure it actually is fixed and then we would talk money! I think we might have to take out a loan to pay him for his trouble! I asked him what he finally fixed that he thinks was the trouble. He said the catalytic converter. Well, I sure hope that actually was the problem and that it is fixed for good!

OK, time to finally work on the Border challenge of Kay's!

Do as much of the work as you can sitting at the table! When my back was hurting, I did a lot of the prep work from my recliner.

That was not right! God doesn't expect perfection from us! He knows we can't accomplish it! The only perfect person is Jesus and He came to die for us and when we accept that substitution, His perfection is what God accepts in place of our failures!

Before we walked out the door to go to the dinner at church on Wednesday night, I remembered I was supposed to take pimento cheese sandwiches! Thankfully Mark helped me throw them together! I spread the cheese on the bread, handed the sandwich to him and he cut them in half and arranged them on the tray!

That is weird! I'm glad they added another year, but I don't know why! I had my license renewed 8 years ago before Tim died and had to update it twice after that but they never increased the renewal time on mine.

In a dream world I could decorate and bake to my hearts content. But I have to take it slow and steady so birthday cakes are it with holiday goodies later. Hubs did all the pizza ingredients prep so that helped.

Yes, we do have McDonalds. Lots of them. They are one of the major chains, Taco Bell, Dairy Queen. Qdoba. Might be a few others in Anchorage and Fairbanks still as they're bigger towns. Our area has a lot of local owned places which is where we usually go when we go out.
 
Friday's are a half day at work, so today was dedicated to getting Christmas shopping started and finished. I had a list of items, a list of stores, and a mission to get. it. done. T.O.D.A.Y. I spent all week psyching myself up for the shopping and therefore peopling in crowded places 10 days before Christmas. But it got done, in budget, and tonight I wrapped all the gifts for two people. I feel very accomplished. Mark is on assignment to pick up a couple things at Lowes, and I need to run into Target for one thing this weekend. Then we can focus on the rest.

Oh. and I have to make green beans for a work luncheon on Monday. Does anyone have any recipes? I hate green bean casserole, and only know how to steam green beans. Any seasoning suggestions? I'll probably get up early Monday, steam them, put them in a corning ware dish, then microwave them before serving. But ladies, this is foreign territory, I need all the help I can get. Salads? Desserts? No problem - all day long. But a hot vegetable? It's quite terrifying.

Ooooooohhhhhhhhh Green beans and sautéed bacon and onion added :love: Green beans with salt, pepper, garlic powder, nutritional yeast, butter and bake!!!!

Seriously, I dont measure. I just layer green beans in a casserole pan, add sautéed bacon and onion. Then I add some salt, pepper, and a touch of butter, bake 350 till hot and yummy. The other one I layer green beans, butter pats, sprinkle garlic powers, salt, pepper, nutritional yeast and bake at 400 stirring every 20 minutes until hot, almost crunchy and yummy, about an hour total.

I'm sorry! Its been a long night and my sarcasm was/is rampant. I love green beans but keep it mostly simple. Adding bacon and onion makes people think you really went crazy and did something extra.
