Low Calorie holiday dessert recipes

It will soon be Thanksgiving and then Christmas. I am trying to find recipes that use stevia or erythritol in them. It would be great if it is a recipe that you have tried and have pointers on. :)

Impossible Pumpkin Pie

Note: We like our Pumpkin pie very spicy so you may want to reduce the amounts listed

Dry Ingredients:
-2/3 Cup Stevia—1 calorie
-1/2 Cup All Purpose Flour—228 calories
-3/4 teaspoon Baking Powder—2 calories
-2 teaspoons Ground Cinnamon—12 calories
-1 teaspoon Ground Allspice—5 calories
-1/2 teaspoon Ground Cloves—3 calories
-1/2 teaspoon Ground Ginger—3 calories
-1/8 teaspoon Salt—0 calories
Wet Ingredients:
-2 Large Eggs—156 calories
-1 15oz can Pumpkin Puree—157.5 calories
-1 Cup Unsweetened, Un?avored Almond
*You can use cow’s milk (103 calories
-1 teaspoon Vanilla Extract—12 calories

Instructions:
Grease pie pan with Butter (I use a glass pie pan) and set aside. Mix together well: Stevia, Flour, Baking Powder, Salt and spices into a small (1 1/2 qt.) bowl and set aside.
In a large bowl beat Eggs (I use a whisk).
Mix in the Pumpkin Puree, Milk, and Vanilla Extract.

*Pre-heat oven to 350 degrees Fahrenheit.

Mix in the Dry Ingredients a bit at a time to avoid lumps and stir/whisk until smooth.

Pour into the prepared pie pan.
Bake for 35 to 40 minutes or until toothpick comes clean from center. (I
have a convection oven so your baking time may be a little longer.)

Pie will be domed in the middle when frst removed from the oven but will
settle.

Let cool on a rack.

When thoroughly cooled, cover with plastic wrap and refrigerate.

Enjoy!

Note: If you cut the pie into 8 pieces, each piece will have 77.5 calories. A medium banana has 105 calories. This pie is essentially a very delicious serving of vegetables!

Thank you so so much! I LOVE pumpkin pie but am watch my calories ( weight watchers points). I am going to print this recipe and make it!❤️
