Is there an English version? I think I can figure out how to do it:
Type out a word. Rasterize it.

Put a thick stroke around it on a separate layer.

CTRL click on the stroke.

Select the photo layer & click delete.

Delete the stroke layer.

It's almost right ..
- Write the text
- Ctrl-click on the thunbail to get a selection
- Extend the selection
- go to the photo layer and delete
- complete erasure if needed ( with the eraser tool )

But make a detour on the blog, there are other examples...
