I know it's getting on fall where most of you are at, but I live in the 'season of summer' 10 months a year here in sunny AZ, where the temps are in the 100's seven days a week. This is the perfect refreshing drink; to make it a 'non-virgin' add 1 cup of rum.

RECIPE
2 large limes, quartered
bunch mint leaves or mint extract
7-8 strawberries, quartered
1 cup white sugar
3 cups carbonated water (club soda)
Red Food coloring (optional)
Squeeze the lime quarters into
a sturdy glass pitcher. Toss the
juiced limes into the pitcher
along with the mint, strawberries,
and sugar. Crush the fruits
together with a muddler (or use a
blender set on course) to
release the juices from the
strawberries and the oil from the
mint leaves. Stir in the club soda
until the sugar has dissolved.
To serve, pour over ice cubes in
sugared-rimmed glasses.
