LOVE this Maya!!! I'm a cupcake fan like you and regularly bake my own ... the best recipes are often the simplest, here's a real easy / quick one you could try:
4oz flour (self raising)
4oz caster sugar
4oz butter (softened)
2 eggs
few drops vanilla extract
Whizz the whole lot in a processor / mixer, devide into cases (mixture makes 12 regular or 6 large), bake at 180c for approx 12-15 minutes. Transfer to wire rack to cool.
6oz icing sugar
3oz butter (softened)
Whizz together to a creamy consistency, spread over each cupcake, then top with sprinkles / decorations of your choice.
ENJOY!!!
