the recipe
200 gr. princess beans
300 gr. chicken mince
1 cm ginger - peeled and grated
2 shallots - finely chopped
1 clove of garlic - peeled
1 tablespoon of madras curry
1 red chili pepper - in pieces
200 ml. coconut milk
100 ml. vegetable stock
1 stalk of lemongrass - cut in half
1 small bok choy cut into strips
1 spring onion - cut into rings
2 wedges of lim
- Blanch the beans in boiling water with a pinch of salt.
- Meanwhile, mix the minced chicken with the ginger and a shallot.
- Fry the meatballs in olive oil. Remove from pan.
- In the same pan you fry the other shallot, together with the garlic, the chili pepper and the madracurry.
- Deglaze with vegetable stock and add the coconut milk and lemongrass. Add the beans and the meatballs and let simmer for 6 minutes.
- Meanwhile cut the bok choy and add the lower part first. This will let you simmer for about 2 minutes. Then you put the leaves of the bok choy in the pan. This will let you simmer for another minute.
- Finish with spring onion and a wedge of lime.
